Thunder Thighs
These are a delicious crowd pleaser. Serve as an entree or sliced up as an appetizer.
Ingredients
2 cups soy sauce
2 cups brown
1 tsp. pureed ginger
2 tbsp. minced garlic
8-10 Boneless, skinless chicken thighs
1/2 cup diced green onions
3 cups sliced mushrooms
1/4 cup butter
1 cup shredded swiss cheese
10 3-4” skewers
Directions
Preheat oven to 350
In a large bowl, whisk together soy sauce, brown sugar, ginger and 1 tablespoon of garlic until sugar is mostly dissolved.
place chicken into bowl and marinate in the refrigerator for at least 1 hour.
20 minutes before assembly, melt butter in a skillet. sauté mushrooms, green onions and garlic until tender.
one at a time, lay thigh out smooth side down, on a flat surface. place 1 tablespoon of mushroom mixture and 1 tablespoon of cheese on top of the thigh. gently pull sides together and seal with a skewer. lay in a baking dish.
When all the thighs are assembled, pour remaining marinade over the chicken. Top with the leftover mushroom mixture and swiss cheese.
Bake uncovered for 30 minutes. Flip over and bake for another 15 minutes.
Let stand 5-10 minutes.
Remove skewers and serve as is, or slice up to serve as an appetizer.
